The Safe & Local Supplier Approval (SALSA) scheme, is a food safety standard which has been specifically developed particularly for companies who may find undertaking a full ISO standard or the BRC Food Standard too costly or demanding for their business. Small businesses and primary food producers find themselves particularly suited to this scheme, allowing them demonstrate enhanced best practices to produce safe and legal food products which meet the requirements of the SALSA standard.
As the focus on local and regional food supply has grown, so SALSA has gained recognition as a robust and effective scheme well suited to smaller businesses. Many buyers across the retail, food service and public procurement sector are driving to expand their locally sourced produce and this scheme has proved a valued standard which is becoming increasingly accepted.
SALSA was established by the British Retail Consortium; British Hospitality Association the Food & Drink Federation and the National Farmers Union. In Scotland mentoring for the scheme is undertaken by Scottish Food Quality Certification (SFQC).
SALSA has been developed specifically for buyers and smaller food producers to demonstrate recognised operating standards, which exceed the minimum standards of enforcement authorities. The SALSA standard is periodically revised and updated; Audit Standard Issue 3 was published in 2012.
The audit standard covers all areas of food safety management controls; HACCP systems; policy and practice documentation and standards of the site premises. Approved businesses are entered and published onto a fully searchable SALSA directory within the SALSA website.
